- 1/2 medium red onion
- 1 clove garlic
- Zest and juice of 1/2 lime
- 1 tbsp apple cider vinegar
- 1 small head cauliflower
- 1 can (15 oz) chickpeas
- Avocado oil
- Chipotle peppers in adobo sauce
- 1/2 cup unsweetened plant-based yogurt
- 2 tbsp vegan mayo (or more yogurt)
- 2 tsp maple syrup (or any sweetener you like)
- Water, only if needed
- 1 tsp garlic powder
- 1 tsp ground coriander
- 1 tsp onion powder
- 1 tsp dry thyme
- 1/4 cup cilantro, minced
- Kosher salt
- Optional: Fresh lime wedges, avocado slices, chopped green onions
- Preheat oven to 425°F.
- Prepare the marinade: Combine sliced onions with garlic, lime zest, lime juice, apple cider vinegar, cilantro, and salt. Let sit.
- Roast chickpeas: Dry and toss with avocado oil and salt; bake for about 20 minutes.
- Roast cauliflower: Season cauliflower and bake for approximately 30 minutes until golden brown.
- Make chipotle sauce: Blend chipotle peppers with yogurt, lime juice, garlic, and cilantro until smooth.
- Combine roasted chickpeas with cauliflower and mix with chipotle sauce before assembling wraps.
