  • 1 clove garlic
  • Zest and juice of 1/2 lime
  • 1 tbsp apple cider vinegar
  • 1 small head cauliflower
  • 1 can (15 oz) chickpeas
  • Avocado oil
  • Chipotle peppers in adobo sauce
  • 1/2 cup unsweetened plant-based yogurt
  • 2 tbsp vegan mayo (or more yogurt)
  • 2 tsp maple syrup (or any sweetener you like)
  • Water, only if needed
  • 1 tsp garlic powder
  • 1 tsp ground coriander
  • 1 tsp onion powder
  • 1 tsp dry thyme
  • 1/4 cup cilantro, minced
  • Kosher salt
  • Optional: Fresh lime wedges, avocado slices, chopped green onions

Instructions

  1. Preheat oven to 425°F.
  2. Prepare the marinade: Combine sliced onions with garlic, lime zest, lime juice, apple cider vinegar, cilantro, and salt. Let sit.
  3. Roast chickpeas: Dry and toss with avocado oil and salt; bake for about 20 minutes.
  4. Roast cauliflower: Season cauliflower and bake for approximately 30 minutes until golden brown.
  5. Make chipotle sauce: Blend chipotle peppers with yogurt, lime juice, garlic, and cilantro until smooth.
  6. Combine roasted chickpeas with cauliflower and mix with chipotle sauce before assembling wraps.
