  • 1/2 cup diced cucumber
  • 1/2 cup diced tomato
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 4 whole wheat tortillas
  • 1/4 cup hummus

Instructions

  1. Rinse and drain the chickpeas thoroughly; let dry.
  2. In a medium bowl, mash the chickpeas until chunky but cohesive.
