  • 1/4 cup fresh parsley leaves, chopped
  • 2 Tbsp nutritional yeast (or grated Parmesan cheese)
  • 2 tsp Italian seasoning
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 3/4 tsp smoked paprika
  • 3/4 tsp kosher salt
  • 2 Tbsp extra-virgin olive oil

Instructions

  1. In a food processor, combine chickpeas, breadcrumbs, eggs, parsley, nutritional yeast, Italian seasoning, black pepper, garlic powder, smoked paprika, salt, and olive oil. Blend until well mixed but slightly textured.
  2. Use a small cookie dough scoop to form the mixture into golf ball-sized meatballs.
  3. Heat olive oil in a large skillet over medium heat. Add the meatballs in batches without overcrowding.
  4. Cook for about 6–8 minutes until golden brown on all sides.
  5. Remove from the skillet and let drain on paper towels before serving.
