  • 1/3 cup coconut sugar
  • 2 tablespoons monk fruit sweetener or additional coconut sugar
  • 2 tablespoons water
  • 1/4 cup cacao powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/4 cup unsweetened shredded coconut

Instructions

  1. Preheat your oven to 350°F.
  2. In a food processor, blend together chickpeas, peanut butter, coconut sugar, monk fruit sweetener, water, cacao powder, baking soda, vanilla extract, and sea salt until smooth.
  3. Gently fold in the shredded coconut until evenly distributed.
  4. Shape the dough into about 15 balls and place them on a lined baking sheet. Flatten each ball slightly with a fork.
  5. Bake for 12-15 minutes until edges are set; let cool on the sheet before transferring to a wire rack.
