  • 1 pound boneless, skinless chicken breast or thighs
  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 2 garlic cloves, minced
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups cooked rice, quinoa, or cauliflower rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • Fresh parsley or dill, for garnish

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, oregano, minced garlic, smoked paprika, salt, and pepper. Add chicken pieces and coat well. Marinate for at least 15 minutes.
  2. Cook the Chicken: Heat olive oil in a skillet over medium heat. Cook chicken for about 6-7 minutes per side until golden brown and cooked through (165°F/75°C). Let rest before slicing.
  3. Make the Tzatziki Sauce: Mix Greek yogurt with grated cucumber (excess water squeezed out), olive oil, lemon juice, minced garlic, chopped dill, salt, and pepper in another bowl until well combined.
  4. Assemble Bowls: Start with a base of your chosen grain in each bowl. Layer sliced chicken on top along with fresh vegetables and drizzle generously with tzatziki sauce.
