  • 16 ounce can tomato sauce
  • 7 ounce can chipotles in adobo sauce (use 1/2 the can for less spicy)
  • 1 tablespoon chili powder
  • 1 teaspoon Mexican oregano
  • ½ teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat. Sauté chopped onions and jalapeño for about 5 minutes until softened.
  2. Add garlic and cook for an additional 30 seconds.
  3. Season chicken with salt and pepper, then brown on both sides in the pan for about 4 minutes total.
  4. Blend tomato sauce and chipotles in a food processor, then pour over chicken.
  5. Season with chili powder, cumin, Mexican oregano, salt, and pepper; stir well.
  6. Bring to a boil, then reduce heat to simmer covered for 30 minutes until chicken is tender.
  7. Shred chicken using two forks and return to the pan; simmer for another 5 minutes to combine flavors.
