  • 10 ounces frozen spinach, thawed and squeezed dry
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese (plus more for serving)
  • 1 lb penne pasta
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package directions until al dente. Reserve about ½ cup of pasta water.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sauté until browned and cooked through. Remove from skillet.
  3. In the same skillet, cook onions until softened; add garlic and sauté briefly.
  4. Stir in spinach until heated through.
  5. Add chicken broth and heavy cream; bring to a simmer until slightly thickened.
  6. Mix in Parmesan cheese, then combine with cooked penne and chicken. Adjust consistency with reserved pasta water if necessary.
