  • 2 eggs
  • 2 cups panko breadcrumbs
  • 1 cup grated parmesan cheese
  • 1/4 cup neutral oil (vegetable or olive oil)
  • 1 large head of romaine lettuce, chopped
  • 1 cup croutons
  • 1/2 cup Caesar dressing
  • 4 extra-large burrito wraps

Instructions

  1. Prepare the chicken by slicing each breast in half horizontally and flattening to about 1/4 inch thickness.
  2. Set up a breading station with three bowls: one for flour mixed with salt and pepper, one for whisked eggs, and one for panko breadcrumbs mixed with grated parmesan.
  3. Coat each chicken piece in flour, then dip into the egg mixture, followed by pressing into the panko mixture until fully coated.
