Ingredients

  • Rice paper sheets
  • Shredded chicken
  • Ripe mango
  • Ripe avocado
  • Cucumber (matchsticks)
  • Carrot (matchsticks)
  • Lettuce leaves
  • Fresh mint and cilantro
  • Coconut milk
  • Peanut butter

Instructions

  1. Prepare the peanut sauce by whisking together coconut milk, peanut butter, sesame oil, lime juice, honey, garlic, soy sauce, and warm water until smooth.
  2. Slice all filling ingredients into thin strips: lettuce, chicken, mango, avocado, cucumber, carrot.
  3. Soak rice paper sheets in warm water until soft (20-60 seconds).
  4. Lay softened rice paper on a clean surface and place a lettuce leaf at the bottom third.
  5. Add fillings (chicken, mango, avocado, vegetables) and squeeze lime juice on top.
  6. Roll tightly like a burrito and transfer seam-side down to a plate.
  7. Repeat until all ingredients are used.
