  • 3 Tbsp butter
  • 4 Tbsp all-purpose flour
  • 2 cups chicken stock
  • 1/2 cup water
  • Instant Pot Mashed Potatoes

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat; cook chicken for about 5 minutes on each side until fully cooked (165℉ internal temperature). Remove and set aside.
  2. In the same skillet, reduce heat to medium-low, add butter and chicken base until melted. Gradually whisk in flour, onion powder, and garlic powder; cook for 30 seconds.
  3. Slowly pour in chicken stock while scraping the pan's bottom; whisk continuously to prevent lumps. Add water and simmer until thickened.
  4. Shred the cooked chicken and return it to the gravy; simmer together for a few minutes.
  5. Serve over warm mashed potatoes, adjusting seasoning as necessary.
