  • 1 tbsp butter
  • ½ medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups broccoli florets (fresh or thawed frozen)
  • ½ tsp Italian seasoning
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked shredded chicken
  • 2 cups shredded cheddar cheese (preferably sharp)
  • Salt & pepper to taste

Instructions

  1. Heat olive oil and butter in a skillet over medium heat. Sauté chopped onion for 3–4 minutes until soft.
  2. Add broccoli florets and cook for an additional 2 minutes.
  3. Stir in garlic, Italian seasoning, and orzo pasta; toast for 30 seconds.
  4. Pour in chicken broth and heavy cream; bring to a boil then simmer gently.
  5. Cook uncovered for about 10 minutes, stirring occasionally until orzo is tender.
  6. Stir in shredded chicken until heated through.
  7. Remove from heat, fold in cheddar cheese until melted.
  8. Season with salt and pepper to taste; let sit for 2–3 minutes before serving.
