  • 1 large onion, peeled and diced
  • 6 garlic cloves, minced
  • 1 ½ Tbsp Organic Better than Bouillon Roasted Chicken Base
  • 4 Cups water
  • 4 large apples, diced
  • 4 large potatoes, diced
  • 1 Tbsp maple syrup
  • 2 Cups shredded gouda cheese
  • 4 Cups shredded cheddar cheese
  • Himalayan salt and black pepper to taste

Instructions

  1. Prepare the plant-based bacon by preheating the oven to 375°F. Line a sheet pan with parchment paper, lay out the bacon strips, drizzle with maple syrup, sprinkle with paprika and cayenne pepper. Bake for about 30 minutes until crispy.
  2. In a large pot, combine chicken bouillon base with water. Add onions, garlic, potatoes, and apples. Cook on medium heat for 20-30 minutes until soft.
  3. Blend the mixture until smooth using an immersion blender. Stir in maple syrup, shredded cheeses, salt, pepper, and spices until melted.
  4. Chop the crispy bacon into pieces and stir into the soup before serving.
