  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In one bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl, whisk together eggs, both sugars, oil, and vanilla. Mix wet and dry ingredients together before folding in shredded carrots and nuts if using.
  3. Pour the carrot cake mixture into the prepared pan.
  4. For the cheesecake layer, beat softened cream cheese until smooth. Gradually add sugar and flour; mix well before adding eggs one at a time and incorporating sour cream.
  5. Pour the cheesecake mixture over the carrot cake layer.
  6. Bake for 50–60 minutes until the center is set but slightly jiggly. Cool in the oven with the door cracked for about 30 minutes before transferring to the fridge to chill for at least four hours or overnight.
