  • 4 pounds beef short ribs
  • 1 cup soy sauce
  • ½ cup brown sugar
  • ¼ cup rice vinegar
  • ¼ cup hoisin sauce
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 2 tablespoons sesame oil
  • 1 tablespoon chili paste (optional)
  • 1 teaspoon black pepper

Instructions

  1. Rinse the beef short ribs under cold water and pat dry.
  2. In a bowl, whisk together soy sauce, brown sugar, rice vinegar, hoisin sauce, ginger, garlic, sesame oil, chili paste (if using), and black pepper to create the marinade.
  3. Place the short ribs in a resealable bag or bowl and pour the marinade over them. Seal or cover and refrigerate for at least 2 hours (preferably overnight).
  4. Preheat your oven to 325°F (160°C).
  5. Sear the marinated ribs in a skillet over medium-high heat until browned on all sides (3-4 minutes each side).
  6. Transfer the ribs to a roasting pan and pour any remaining marinade over them.
  7. Cover with aluminum foil and roast for about 3-4 hours until fork-tender.
  8. Remove foil in the last 30 minutes to allow caramelization.
  9. Let rest for 10-15 minutes before slicing.
