  • 4 boneless, skinless chicken breasts
  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 8 ounces fresh mozzarella cheese
  • 2 medium Roma tomatoes
  • 1 cup fresh basil leaves
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Italian seasoning
  • 2 cloves garlic (minced)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Balsamic glaze for drizzle (optional)

Instructions

  1. Marinate the chicken by whisking together olive oil, balsamic vinegar, Dijon mustard, Italian seasoning, garlic, salt, and pepper. Coat the chicken well and refrigerate for at least an hour.
  2. Preheat the oven to 400°F (200°C).
  3. Make deep cuts in each chicken breast to create pockets for stuffing.
  4. Fill the pockets with tomato slices, mozzarella slices, and basil leaves.
  5. Bake on a prepared baking sheet for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
