  • 3 large grapefruit (preferably organic)
  • 3 cups filtered water (plus extra for blanching)
  • 3 cups granulated sugar (plus extra for rolling)

Instructions

  1. Thoroughly wash the grapefruit and cut them into quarters. Carefully remove the flesh, keeping as much white pith on the peel as possible.
  2. Blanch the peels by boiling them in water for about 10 minutes to soften and reduce bitterness. Drain and rinse under cold water.
  3. In a pot, combine 3 cups of fresh filtered water with 3 cups of granulated sugar and stir until dissolved. Add in the blanched peels and simmer on low heat for 45-60 minutes until they become translucent.
  4. Remove the peels from the syrup using tongs and place them on a wire rack to cool slightly. While still tacky, roll each piece in granulated sugar until well coated.
  5. Allow the sugared peels to dry completely before storing them in an airtight container.
