  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon hot sauce
  • 20 medium shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon granulated sugar (optional)
  • 1 jalapeño (thinly sliced)
  • 2 tablespoons chopped fresh chives
  • lemon wedges (for serving)

Instructions

  1. 1. Hard boil the eggs by placing them in a saucepan, covering with water, boiling for 12 minutes, then cooling.
  2. 2. Peel and halve the eggs; scoop out yolks into a bowl and mash with mayonnaise, mustard, hot sauce, and spices.
  3. 3. Coat shrimp in spice mix and sear in olive oil until cooked through.
  4. 4. Fill egg whites with yolk mixture, top with shrimp and garnish with jalapeño slices and chives.
