  • 1 â…“ cups uncooked long grain white rice
  • 2 â…” cups chicken broth
  • 1 pound large or jumbo shrimp (peeled and de-veined)
  • 4 tablespoons butter (melted, divided)
  • 1 teaspoon minced garlic
  • 1 ½ teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon cracked black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon crushed red pepper flakes

Instructions

  1. In a bowl, whisk together all the spices for the Cajun seasoning.
  2. Melt 2 tablespoons of butter in a skillet over medium heat. Stir in minced garlic and half of the Cajun seasoning followed by the rice.
  3. Pour in chicken broth and bring to a boil. Reduce to a simmer, cover, and cook for about 15 minutes.
  4. While the rice cooks, toss shrimp with remaining melted butter and Cajun seasoning.
  5. Once rice is almost done, stir in seasoned shrimp. Cover and cook for an additional 3-5 minutes until shrimp are pink and opaque.
