  • 1 ½ cups chicken broth
  • ¾ cup heavy cream (or half-and-half)
  • 10 oz. Rotel diced tomatoes with green chilies
  • 2 teaspoons Cajun seasoning
  • Olive oil and butter for cooking
  • Fresh cilantro and lime for garnish

Instructions

  1. Season chicken breasts with Cajun seasoning and dust lightly with flour.
  2. In a skillet over medium heat, melt olive oil and butter. Sear chicken for 5–7 minutes per side until cooked through. Remove from skillet.
  3. In the same skillet, sauté minced garlic until fragrant, then stir in flour, chicken broth, cream, honey, hot sauce, and spices. Simmer until thickened.
  4. Add diced tomatoes and return chicken to the skillet. Top with shredded cheese and let everything meld on low heat for about 5 minutes.
  5. Serve garnished with fresh lime juice and chopped cilantro over rice.
