  • 1/2 cup low-sodium chicken broth
  • 1/2 cup tomato sauce
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 8 oz sharp cheddar cheese, freshly shredded
  • 1/4 tsp paprika
  • salt (to taste)
  • 46 brioche hamburger buns
  • softened butter (for toasting, as needed)
  • freshly ground black pepper (to finish)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add ground chicken, cooking until no longer pink (5–7 minutes). Stir in chopped onion and cook until translucent (3–4 minutes). Add garlic and Cajun seasoning, cooking for another minute.
  2. Mix in tomato paste, broth, and tomato sauce; simmer uncovered for 8–10 minutes until thickened. Season with salt and optional brown sugar.
  3. For the cheese sauce, melt butter in a saucepan. Whisk in flour for one minute, then gradually add milk while stirring until it thickens (4–5 minutes). Stir in shredded cheese until smooth.
  4. Toast brioche buns and assemble by placing the Cajun chicken filling on the bottom bun, followed by the cheese sauce.
