  • ¾ cup shredded mozzarella or Monterey Jack cheese
  • 4 oz goat cheese
  • 1 cup thinly sliced onions
  • ¼ cup white grape juice or apple juice
  • 2 tbsp butter or olive oil
  • ½ tsp thyme (fresh or dried)
  • 1 cup roasted butternut squash (peeled and diced)
  • 2 tbsp olive oil (for roasting)
  • Salt and freshly ground black pepper to taste
  • 3 large eggs
  • 1½ cups whole milk

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced butternut squash with olive oil, salt, and pepper; roast for about 25 minutes until tender.
  3. In a skillet over medium-low heat, melt butter or olive oil and add sliced onions; cook slowly for 20-30 minutes until caramelized.
  4. In a mixing bowl, whisk together eggs, milk, thyme, nutmeg, salt, and pepper.
  5. Layer roasted squash, caramelized onions, mozzarella or Monterey Jack cheese, and goat cheese in the pie crust; pour egg mixture over the top.
