  • 16 oz extra firm tofu
  • 1/31/2 cup cornstarch
  • 1/3 cup unsweetened non-dairy milk
  • 1/2 cup buffalo sauce
  • 23 cups romaine lettuce, chopped
  • 1/2 cup shredded vegan cheese
  • 1/2 cup matchstick carrots
  • 1 avocado, sliced
  • 4 large tortillas (or gluten-free wraps)
  • 1 cup unsweetened almond milk yogurt
  • 2 tbsp lemon juice
  • 1 tbsp vinegar
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1 tbsp fresh dill, minced (or 1 tsp dried)
  • 1 tbsp fresh parsley, minced (or 1 tsp dried)

Instructions

  1. Preheat oven to 400°F (204°C). Slice the tofu into strips.
  2. Combine cornstarch, garlic powder, and salt on a plate; dip tofu in non-dairy milk then coat it in the cornstarch mixture.
  3. Bake coated tofu on a parchment-lined baking sheet for about 25 minutes, flipping halfway through.
  4. Toss baked tofu in buffalo sauce and return to the oven for another 5 minutes.
  5. Assemble by spreading vegan ranch on tortillas, adding veggies and tofu, then rolling tightly.
  6. Optionally, grill the wraps for added crispiness.
