  • 1/2 cup unsalted butter (softened)
  • 2 cups creamy peanut butter
  • 1 teaspoon vanilla extract
  • 4 cups confectioners sugar
  • 12 oz semisweet chocolate chips
  • 11.5 oz milk chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Line a large baking sheet with parchment paper.
  2. Cream together softened butter and peanut butter until smooth.
  3. Mix in vanilla extract and sea salt until combined.
  4. Gradually add powdered sugar until the mixture is thick enough to roll into balls.
  5. Scoop tablespoon-sized portions and roll into balls; place on the baking sheet.
  6. Chill in the refrigerator for about 15 minutes to firm up.
  7. Melt semisweet and milk chocolate chips with coconut oil.
  8. Dip each chilled ball into melted chocolate, covering about 80%.
  9. Place back on the baking sheet and let cool until set.
  10. Remove toothpicks gently after cooling.
