  • 8 ounces uncooked pasta shells (gluten-free if needed)
  • 12 ounces Brussels sprouts, thinly sliced
  • 1 clove garlic, grated or minced
  • 1/4 teaspoon red pepper flakes
  • Kosher salt and black pepper to taste
  • 3 tablespoons pesto
  • Juice of 1 lemon
  • 1/4 cup shredded parmesan cheese
  • 4 slices of chicken bacon, cooked and chopped

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve some pasta water before draining.
  2. While the pasta cooks, sauté the sliced Brussels sprouts in a skillet over medium heat with garlic and red pepper flakes for about 3-5 minutes until tender.
  3. Add cooked chicken bacon to the skillet along with drained pasta, pesto, lemon juice, and parmesan cheese. Stir well to combine, adding reserved pasta water as needed for creaminess.
  4. Serve hot, garnished with additional parmesan if desired.
