  • 4 ounces semisweet chocolate, chopped
  • ¾ cup unsalted butter
  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 3 large eggs
  • 1½ teaspoons vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup cocoa powder
  • ¾ teaspoon salt
  • For the ganache: 6 ounces semisweet chocolate, chopped
  • ¾ cup heavy whipping cream
  • fleur de sel for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. Melt chocolate and butter in a saucepan over low heat until smooth.
  3. Remove from heat and stir in granulated sugar and light brown sugar until combined. Add eggs one at a time, whisking well after each addition.
  4. Sift together flour, cocoa powder, and salt in another bowl. Fold into wet ingredients until just combined.
  5. Pour batter into the prepared pan and bake for about 20–25 minutes until a toothpick inserted comes out with moist crumbs.
  6. Cool brownies completely before cutting them into small squares or rectangles.
  7. Heat heavy whipping cream in another saucepan until it simmers, then pour over chopped semisweet chocolate. Let sit before stirring until smooth.
  8. Coat each brownie square with warm ganache and allow excess to drip off. Sprinkle with fleur de sel and let set before serving.
