  • 6 tablespoons unsalted butter
  • 1/4 cup freshly grated Parmesan cheese (plus extra for serving)
  • 1 medium lemon (zested and juiced)
  • 3 tablespoons minced fresh dill
  • Kosher salt and black pepper to taste

Instructions

  1. Cook pasta in a large pot of salted boiling water until al dente, about 1-2 minutes less than package instructions. Reserve 1 cup of pasta cooking water and drain.
  2. In a large skillet over medium heat, melt 4 tablespoons butter until browned and nutty, about 3-5 minutes. Remove from heat.
  3. Slowly add reserved pasta water to the skillet, stirring to combine. Add remaining butter one tablespoon at a time while stirring constantly until emulsified.
  4. Toss cooked pasta into the sauce along with lemon juice, zest, and grated Parmesan cheese. Stir until well coated.
  5. Gently fold in minced dill and season with salt and pepper to taste.
  6. Serve warm with additional Parmesan on top.
