  • 2 â…” cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

Instructions

  1. Prepare the brown butter by melting cold unsalted butter over medium heat until golden brown and nutty in aroma. Let cool slightly.
  2. In a large mixing bowl, combine cooled brown butter with flour and salt. Gradually mix in water and vinegar until a cohesive dough forms. Wrap in plastic wrap and refrigerate for at least an hour.
  3. While the dough chills, mix sliced peaches and hulled strawberries with sugar, cornstarch, lemon juice, zest, and salt in another bowl.
  4. Roll out the chilled dough to fit your pie pan. Pour the fruit filling into the crust and sprinkle optional Turbinado sugar on top.
  5. Bake at 375°F (190°C) for about 70 minutes until golden brown and bubbly. Cool completely before serving.
