Ingredients

Scale
  • 1/2 cup unsalted butter (room temperature)
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1/3 cup Dutch-process cocoa powder
  • 1 cup all-purpose flour (spooned and leveled)
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup semi-sweet chocolate chips
  • 1 cup cold cubed unsalted butter
  • 2/3 cup granulated sugar
  • 1 egg plus 1 egg yolk (room temperature)
  • 2 teaspoons vanilla
  • 2 cups plus 7 tablespoons all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F and prepare two baking sheets with parchment paper.
  2. In a stand mixer, cream together butter and brown sugar until fluffy. Add the egg and vanilla, mixing well.
  3. Combine flour, cocoa powder, baking soda, and salt in a separate bowl; sift into the wet mixture and mix on low speed until combined.
  4. Fold in chocolate chips.
  5. For the chocolate chip dough: Cream cold butter with brown and granulated sugars until pale; add eggs one at a time along with vanilla.
  6. Mix dry ingredients separately; incorporate into wet mixture before folding in more chocolate chips.
  7. Form balls from both doughs, combining them into one larger ball before placing on the baking sheet.
  8. Bake for 8-9 minutes until edges are set but tops remain slightly underbaked.
