  • 2 tablespoons balsamic vinegar
  • 2 tablespoons parsley leaves (finely chopped)
  • 2 tablespoons basil leaves (finely chopped)
  • 2 tablespoons Castelvetrano olives (chopped)
  • 2 tablespoons Kalamata olives (chopped)
  • 1 clove garlic (grated)
  • ½ teaspoon dried oregano
  • ¼ teaspoon flaky sea salt (or more to taste)
  • ¼ cup parmesan cheese (freshly grated, or nutritional yeast for a dairy-free option)
  • fresh warm bread (for serving)

Instructions

  1. In a shallow bowl, combine ¾ cup of extra virgin olive oil and 2 tablespoons of balsamic vinegar.
  2. Finely chop 2 tablespoons each of parsley and basil, as well as 2 tablespoons each of Castelvetrano and Kalamata olives; add to the bowl.
  3. Grate 1 clove of garlic into the mixture, then stir in ½ teaspoon dried oregano and ¼ teaspoon flaky sea salt.
  4. Mix well and finish with ¼ cup freshly grated Parmesan cheese (if using). Serve immediately alongside warm bread for dipping.
