  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, melted and cooled (1 stick butter/8 tbsp)
  • ¼ cup granulated sugar (50g)
  • ⅓ cup light or dark brown sugar, packed (25g)
  • 1 tsp vanilla extract
  • 1 egg
  • 1 tbsp freeze-dried blueberry powder (6g)
  • 24 tbsp blueberry jam (14g-42g)
  • Liquid, gel, or powder food coloring (blue, green)
  • 1 tbsp melted milk or dark chocolate
  • 1 tbsp melted white chocolate
  • Oil-based food coloring (pink/red)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In another bowl, mix melted butter, granulated sugar, brown sugar, vanilla extract, and egg until combined.
  4. Fold in the freeze-dried blueberry powder and blueberry jam into the wet mixture until just combined.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet with space between each cookie.
  6. Bake for 11 minutes or until lightly golden around the edges. Allow cooling on the baking sheet before transferring to wire racks.
  7. Once cooled, drizzle melted chocolate over each cookie and decorate as desired.
