  • 1/2 cup butter (softened)
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 & 1/2 cup all-purpose flour
  • 1 tbsp corn starch
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup fresh blueberries (washed and dried well)
  • 11.5 tbsp blueberry jam
  • 3 tbsp butter (for streusel)
  • 2 tbsp brown sugar (for streusel)
  • 2 tbsp granulated sugar (for streusel)
  • 1/3 cup flour (for streusel)
  • a pinch salt (for streusel)
  • a pinch cinnamon (for streusel)

Instructions

  1. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Beat in an egg and vanilla extract until well combined.
  3. In a separate bowl, combine flour, cornstarch, baking powder, baking soda, and salt; gradually mix into the wet ingredients.
  4. Carefully fold in fresh blueberries and blueberry jam.
  5. Prepare streusel topping by mixing butter, brown sugar, granulated sugar, flour, salt, and cinnamon until crumbly.
  6. Preheat oven to 350°F (175°C). Drop rounded tablespoons of dough onto lined baking sheets; sprinkle with streusel.
  7. Bake for 13 minutes or until golden around the edges. Allow to cool before serving.
