  • 1/2 cup milk
  • 1 cup fresh or frozen blueberries (tossed in 1 tablespoon flour)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In one bowl, mix flour, baking powder, baking soda, and salt. In another bowl, cream the softened butter and sugar until fluffy. Add eggs one at a time followed by vanilla extract.
  3. Gradually combine dry ingredients with milk alternately until smooth, then fold in blueberries.
  4. In a separate bowl, beat cream cheese with sugar, egg, and vanilla until creamy.
  5. Pour half of the batter into the pan, layer with cream cheese mixture, then top with remaining batter.
  6. Bake for about 55-65 minutes or until a toothpick comes out clean. Cool for 10 minutes before transferring to a wire rack.
