  • 16 ounces uncooked DeLallo Shellbows
  • 4 cups chopped romaine or iceberg lettuce
  • 10 ounces halved grape or cherry tomatoes
  • 1 cup shredded mozzarella
  • 1/4 cup chopped red onion
  • 1 cup mayonnaise
  • 2 tablespoons DeLallo Simply Pesto
  • 1 tablespoon white vinegar
  • Salt & pepper to taste

Instructions

  1. Cook the shellbows in boiling salted water until al dente. Drain and cool.
  2. In a small bowl, mix together mayo, pesto, vinegar, minced garlic, salt, and pepper to create the dressing.
  3. In a large bowl, combine cooled pasta with lettuce, tomatoes, mozzarella, and red onion.
  4. Pour dressing over salad and toss until well combined. Adjust seasoning as needed.
  5. Serve immediately or chill for at least 30 minutes to let flavors meld.
