  • 1 lb mahi mahi fillets
  • ½ tablespoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • ½ teaspoon fresh cracked black pepper
  • Pinch of cayenne
  • 2 tablespoons avocado oil
  • 1 cup grilled or roasted corn
  • 1 cup finely diced pineapple
  • ¼ cup red onion (finely diced)
  • 1 jalapeño (finely minced)
  • ½ bunch cilantro (chopped)
  • 1 lime (juiced)
  • 1 teaspoon agave
  • 1 teaspoon olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon fresh cracked pepper
  • ¼ cup sour cream
  • ¼ cup mayonnaise
  • 1 chipotle pepper in adobo sauce (finely chopped)
  • 1 tablespoon adobo sauce
  • ½ lime (juiced)
  • Warm corn tortillas
  • Purple cabbage (finely shredded)
  • Additional cilantro
  • Lime wedges for garnish

Instructions

  1. Preheat your broiler. In a small bowl, mix smoked paprika, onion powder, salt, garlic powder, oregano, black pepper, and cayenne.
  2. Pat mahi mahi dry and drizzle with avocado oil. Coat with the spice mixture.
  3. Place mahi mahi on a baking tray and broil for about 8 minutes until flaky and cooked through.
  4. Meanwhile, in a medium bowl, combine corn, pineapple, red onion, jalapeño, lime juice, agave, olive oil, salt, and pepper to make the salsa.
  5. For the chipotle sauce, whisk together sour cream and mayonnaise with chopped chipotle pepper and lime juice.
  6. Warm tortillas on a skillet or in the oven before assembling tacos.
  7. Layer each tortilla with cabbage, flaked fish, salsa, chipotle sauce, and garnish with cilantro.
