  • 6 oz fresh blackberries (plus extra for serving)
  • 3 tbsp balsamic vinegar
  • 1/4 cup olive oil
  • 2 tsp honey
  • 1 tsp Dijon mustard
  • 2 cups torn fresh basil
  • 4 cups arugula
  • 1 ripe avocado, sliced
  • Optional: toasted pumpkin seeds for garnish

Instructions

  1. Prepare the Marinade: In a blender, combine blackberries, balsamic vinegar, olive oil, honey, Dijon mustard, salt, and thyme. Blend until smooth and strain to remove seeds.
  2. Marinate the Chicken: Reserve about 2/3 of the marinade for dressing. Pour the remaining marinade over chicken breasts and let marinate for at least 30 minutes or overnight.
  3. Grill the Chicken: Preheat the grill to medium heat. Grill marinated chicken for about 20-25 minutes until cooked through (internal temperature of 165°F).
  4. Assemble the Salad: In serving bowls, layer arugula and basil. Top with grilled chicken slices, avocado, extra blackberries, and drizzle with reserved dressing.
