  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 medium onion, sliced
  • 1 bell pepper (red or green), sliced
  • 8 ounces mushrooms (shiitake or button), sliced
  • 3 cloves garlic, minced
  • 2 green onions, chopped for garnish
  • 1 tablespoon soy sauce
  • 1 tablespoon plant-based oyster sauce
  • 1 teaspoon honey
  • 1/2 teaspoon rice vinegar
  • 2 tablespoons vegetable oil, divided

Instructions

  1. In a bowl, mix the sliced chicken with cornstarch, salt, and half a teaspoon of black pepper until evenly coated.
  2. Heat one tablespoon of vegetable oil in a large skillet over medium-high heat. Stir-fry the chicken until browned and cooked through (about 4–5 minutes). Remove the chicken from the skillet and set aside.
  3. Add another tablespoon of oil to the same skillet. Sauté the onion and bell pepper for about 2–3 minutes until softened. Then add the mushrooms and garlic, cooking until everything is tender.
  4. In a separate bowl, whisk together the soy sauce, plant-based oyster sauce, honey, rice vinegar, and remaining black pepper.
  5. Pour the sauce over the vegetables and return the cooked chicken to the skillet. Toss everything together until well-coated and heated through (about 1–2 minutes).
  6. Garnish with chopped green onions before serving hot over rice or noodles.
