  • ½ teaspoon salt
  • 1½ cups all-purpose flour
  • Flaked salt (for sprinkling)

Instructions

  1. Freeze 13 one-teaspoon-sized balls of Biscoff cookie butter for at least 30 minutes.
  2. Preheat your oven to 350°F (175°C).
  3. In a medium bowl, cream together the unsalted butter and half a cup of Biscoff cookie butter until smooth.
  4. Gradually add brown sugar and granulated sugar, mixing until light and fluffy.
  5. Mix in the egg and vanilla extract until fully incorporated.
  6. In a separate bowl, whisk together baking soda, salt, and flour. Gradually add this mixture to the wet ingredients until combined.
  7. Scoop out portions of dough, press in the frozen cookie butter centers, then form into balls.
  8. Place on parchment-lined baking sheets with space between each cookie.
  9. Bake for 11-13 minutes or until golden at the edges but soft in the center.
  10. Let cool on the baking sheet for about 5 minutes before transferring to a wire rack.
