  • 3 large leeks
  • 2 garlic cloves (minced)
  • 4 cups vegetable broth
  • 2 pounds Yukon Gold potatoes (peeled and diced)
  • 1 teaspoon kosher salt
  • 1 bay leaf
  • 2 sprigs fresh thyme
  • Fresh chives and black pepper for garnish

Instructions

  1. Slice the leeks, keeping only the white and light green parts. Rinse them under cold water to remove any dirt.
  2. In a large pot, heat olive oil over medium heat. Sauté the leeks for 8-10 minutes until softened, then add minced garlic and cook for another minute.
  3. Add diced potatoes, salt, bay leaf, thyme, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  4. Remove the bay leaf and thyme sprigs. Use an immersion blender to puree the soup until desired creaminess is reached.
  5. Ladle into bowls and garnish with freshly chopped chives and cracked black pepper before serving.
