  • 2 Tablespoons Olive Oil
  • 4 Yellow Onions (sliced thin and evenly)
  • 2 Pounds Yukon Gold Potatoes (washed)
  • 4 Tablespoons Non-Dairy Butter
  • 3/4 Cup Full-Fat Coconut Milk or Dairy-Free Milk
  • 1 Teaspoon Kosher Salt
  • 1 Cup Parmesan Cheese (freshly grated)
  • 1 Bunch Chives (thinly chopped)
  • 2 Sprigs Fresh Thyme (stems removed)
  • 3 Leaves Fresh Sage (chopped)

Instructions

  1. Slice the onions thinly and caramelize them in olive oil over medium heat for 40-50 minutes until golden brown.
  2. Wash and chop the Yukon Gold potatoes into small pieces.
  3. Boil the potatoes in salted water for about 20 minutes until fork-tender.
  4. Drain the potatoes and mash with non-dairy butter and coconut milk until smooth.
  5. Mix in half of the caramelized onions and grated parmesan cheese.
  6. Serve topped with remaining caramelized onions and fresh herbs.
