  • 2 medium Fresh Beets (about 250g)
  • 1 English Cucumber (about 200g), sliced
  • 100g Crumbled Feta Cheese
  • 2 tbsp Fresh Dill, chopped
  • 3 tbsp Extra Virgin Olive Oil
  • 1 tbsp Aged Balsamic Vinegar
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wrap beets in foil and roast for about 45 minutes until tender. Let cool before peeling.
  2. Slice cucumber into thin rounds.
  3. In a large bowl, combine sliced cucumbers and diced beets gently.
  4. Sprinkle crumbled feta and chopped dill over the mixture.
  5. Whisk olive oil, balsamic vinegar, salt, and pepper in a small bowl; drizzle over salad just before serving.
  6. Toss gently to coat everything well. Serve chilled or at room temperature.
