- 1 packet wonton wrappers (about 25 – 30 sheets)
- 400 g / 1 lbs beef mince (ideally fatty mince)
- ½ cup scallion/spring onion (finely chopped, about 3 bulbs)
- 2 cloves garlic (minced)
- ½ tbsp fresh ginger (minced)
- 1 tbsp soy sauce
- 1 tbsp rice apple vinegar
- ½ tsp dark brown sugar
- â…› tsp sesame oil
- ½ tsp sea salt
- ½ tsp white pepper

- ¼ tsp ginger (for serving, minced or thin matchsticks)
- In a large bowl, mix together ground beef, finely chopped scallions, minced garlic, and fresh ginger until well combined.
- Add soy sauce, rice apple vinegar, dark brown sugar, sesame oil, sea salt, and white pepper to the meat mixture; stir thoroughly.
- Place about one teaspoon of filling onto each wonton wrapper. Moisten edges with water and fold over to seal tightly.
- Cook wontons by either steaming or pan-frying until golden brown; for soup, drop into simmering broth until done.
