  • 8 oz flank steak (or skirt steak), thinly sliced
  • 1 cup low-sodium beef broth
  • 2 tablespoons soy sauce
  • 8 oz fresh Hong Kong pan fry noodles (or other thin noodles)
  • 4 heads baby bok choy, quartered
  • 4 cloves garlic, minced
  • 1/2 yellow onion, sliced
  • Peanut oil for frying

Instructions

  1. Marinate the beef by combining it with vinegar, cornstarch, and salt in a bowl. Let it sit while preparing the other ingredients.
  2. Mix broth, soy sauce, oyster sauce, vinegar, cornstarch, sugar, Chinkiang vinegar, and white pepper in another bowl to create the sauce.
  3. Cook the noodles according to package instructions; drain and set aside.
  4. Heat peanut oil in a large pan over medium-high heat and fry the noodles until golden brown on both sides; remove from the pan.
  5. In the same pan, add more oil if needed and sauté marinated beef until browned; then add onions and carrots followed by garlic and ginger.
  6. Add bok choy until slightly softened; pour in the prepared sauce and let it thicken.
  7. Combine everything together with fried noodles and serve immediately.
