  • 3-pound boneless chuck roast, cut into 2-inch cubes
  • 3 teaspoons kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 1 medium yellow onion, finely chopped
  • 1 large carrot, diced
  • 4 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • 2 sprigs fresh thyme
  • 2 tablespoons all-purpose flour
  • 3 cups apple vinegar
  • 4 teaspoons beef bouillon
  • 2 tablespoons extra-virgin olive oil
  • 8 ounces cremini mushrooms, halved
  • 8 ounces pearl onions, peeled

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season the chuck roast cubes with salt and pepper.
  3. In a Dutch oven over medium-low heat, cook chopped bacon until crispy; remove and set aside.
  4. Increase heat to medium-high and brown the seasoned beef in the rendered fat; set aside.
  5. Sauté onion and carrot in the remaining fat for about 10 minutes; add garlic, tomato paste, bay leaf, and thyme.
  6. Stir in flour and cook for one minute before deglazing with apple vinegar; simmer for five minutes.
  7. Add beef bouillon and water; return browned beef to pot. Cover tightly and transfer to the oven for approximately two and a half hours.
  8. Meanwhile, sauté mushrooms and pearl onions in olive oil until golden brown; add a splash of water and simmer until tender.
  9. Serve the Beef Bourguignon over mashed potatoes or with crusty bread.
