  • 3 tablespoons avocado oil
  • 2 cups BBQ sauce
  • 8 cups romaine lettuce (or 2 small heads)
  • 1 avocado, diced
  • 2 cups quartered grape tomatoes
  • 4 ears corn (omit for Whole30)
  • 6 green onions, thinly sliced (green part only)
  • 1 [15-ounce] can black beans, drained and rinsed (omit for Whole30)
  • ¼ cup loosely packed freshly chopped cilantro leaves
  • 2 tablespoons freshly chopped basil leaves
  • 1 cup light tasting oil
  • 1 egg (omit if using store-bought mayo)
  • ½ cup unsweetened full fat coconut milk
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon kosher salt
  • 1 teaspoon onion powder
  • 2 cloves minced garlic
  • 1 teaspoon freshly cracked black pepper
  • ¼ cup finely chopped fresh dill fronds

Instructions

  1. Marinate cubed chicken in avocado oil and salt.
  2. Pre-soak wooden skewers for 30 minutes and thread chicken onto skewers.
  3. Grill the skewers over medium-high heat; brush with BBQ sauce until cooked through (5-7 minutes per side).
  4. Whisk together dressing ingredients: light oil, egg (if using), coconut milk, lemon juice, apple cider vinegar, salt, onion powder, garlic, dill, parsley, and pepper.
  5. Toss salad base ingredients in a large bowl and top with grilled chicken skewers.
