  • 1 cup cake flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon cornstarch
  • 1 cup unsalted butter (room temperature)
  • ½ cup granulated sugar
  • ½ cup dark brown sugar (packed)
  • 1 large egg + 1 egg yolk
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips
  • ½ cup milk chocolate chips
  • 3 oz dark chocolate bar (chopped)

Instructions

  1. In a medium bowl, whisk together all-purpose flour, cake flour, baking powder, baking soda, salt, and cornstarch.
  2. In a stand mixer, cream together room temperature butter, granulated sugar, and dark brown sugar until light and fluffy (about 2–3 minutes).
  3. Mix in one large egg and one egg yolk with vanilla extract until smooth.
  4. Gradually add dry ingredients to the wet mixture on low speed until just combined.
  5. Fold in semi-sweet and milk chocolate chips along with chopped dark chocolate.
  6. Cover dough with plastic wrap and refrigerate for at least one hour (up to 24 hours).
  7. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  8. Scoop about â…“ cup of dough for each cookie ball and place them three inches apart on the baking sheet.
  9. Bake for about 15–18 minutes until edges are set but centers look slightly underbaked. Let cool slightly before enjoying.
