  • 2 large chicken breasts (sliced into thin fillets)
  • 4 ounces cream cheese (softened)
  • 3/4 cup heavy cream
  • 4 cloves garlic (minced)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/4 cup Parmesan cheese (grated)
  • 3/4 cup mozzarella cheese (grated)
  • 8 ounces sun-dried tomatoes (chopped)
  • 3/4 cup fresh spinach (chopped)

Instructions

  1. Preheat oven to 400°F (204°C).
  2. Slice chicken breasts in half to create fillets and season with salt, pepper, and half the minced garlic.
  3. In a bowl, combine cream cheese and heavy cream until smooth. Mix in remaining garlic, onion powder, paprika, Italian seasoning, salt, pepper, and fold in Parmesan and half the mozzarella.
  4. Spread the creamy mixture over the chicken in a baking dish and sprinkle chopped sun-dried tomatoes on top.
  5. Cover with foil and bake for about 20 minutes until chicken reaches 165°F (74°C).
  6. Stir in spinach and top with remaining mozzarella; bake uncovered for another 10 minutes until bubbly.
