  • 4 salmon fillets
  • Salt and black pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/8 tsp cayenne pepper
  • 1 tbsp extra virgin olive oil
  • 2 avocados (mashed)
  • Zest of 1 lime
  • Juice of 1 lime
  • Chopped fresh dill
  • 1/2 red onion, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place salmon fillets in a baking dish; season with salt, black pepper, garlic powder, paprika, cayenne pepper, and drizzle with olive oil.
  3. Bake in the preheated oven for 12-15 minutes until the fish flakes easily with a fork.
  4. While the salmon bakes, scoop out avocados into a mixing bowl. Mash until desired consistency is reached.
  5. Add lime zest, lime juice, salt, dill, and mix well to combine.
  6. Once salmon is cooked, remove from oven and let rest for a minute.
  7. Spread mashed avocado generously over each fillet and top with chopped red onion before serving.
