  • 8 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • Vegetable oil (for frying)

Instructions

  1. In a bowl, mix together softened cream cheese, shredded cheddar cheese, chopped jalapeños, green onion, garlic powder, salt, and pepper until well combined.
  2. Lay an eggroll wrapper on a flat surface. Place about 2 tablespoons of the filling diagonally across the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal with water.
  3. Heat vegetable oil in a deep skillet to 350°F (175°C).
  4. Fry the eggrolls seam side down in batches for about 3-4 minutes until golden brown. Drain on paper towels before serving.
