- 2 boneless skinless chicken breasts
- 1 cup chopped broccoli
- 5 strips cooked turkey bacon (or substitute with crispy roasted chickpeas)
- 1/2 cup ranch dressing (thicker dressings work best)
- 1/2 large shallot or one small shallot
- Preheat the oven to 400°F (200°C). Bake turkey bacon until crispy, about 15 minutes.
- In a pot of cold water, add chicken breasts and bring to a boil. Cover and simmer for about 14 minutes until cooked through.
- While the chicken cooks, chop shallots and broccoli.
- Shred the chicken into bite-sized pieces once slightly cooled.
- In a large mixing bowl, combine shredded chicken, chopped turkey bacon, broccoli, shallots, and ranch dressing. Mix until well-coated.
