  • 2 ripe avocados
  • 4 thick slices of bread (sourdough or multigrain)
  • 4 oz smoked salmon
  • 1/3 cup crème fraîche
  • 1 tbsp fresh lemon juice
  • Zest from one lemon
  • 1 tbsp chopped fresh dill
  • 2 spring onions/scallions, chopped
  • 2 tbsp capers, chopped
  • 2 tbsp extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Brush both sides of each slice of bread with extra virgin olive oil and toast them in a preheated grill pan over medium-high heat until golden brown (about 2 minutes per side).
  2. In a mixing bowl, scoop out the flesh of the avocados, mash them with a fork, and season with salt.
  3. In another bowl, combine crème fraîche, lemon juice, lemon zest, dill, spring onions, and capers. Mix well.
  4. Spread the mashed avocado on each slice of toasted bread.
  5. Layer smoked salmon over the avocado and top generously with the lemon-herb crème fraîche.
  6. Serve immediately while warm.
